Leftover Turkey Cobb Salad Wraps

Ingredients 

  • 1/3 cup plain Greek yogurt or homemade mayonnaise
  • 2-3 fresh garlic cloves, pressed
  • sea salt and ground pepper, to taste
  • 4 sprouted wheat tortillas
  • 1 cup chopped lettuce
  • 2 large tomatoes, sliced
  • 1 1/2 cups shredded leftover turkey or chicken
  • 4 cooked bacon strips
  • 1 avocado, peeled and sliced
  • 4 hard-boiled eggs, peeled and chopped
  • 1/4 cup crumbled blue cheese
  • fresh parsley
  • red pepper flakes

Instructions 

  • In a small bowl whisk the yogurt and garlic together. Season with sea salt and pepper to your taste.
  • Lay one tortilla on a clean surface. Spread generously with your yogurt mixture.
  • Top with lettuce, tomato, leftover turkey, bacon, avocado, egg, and crumbled cheese. Sprinkle with freshly chopped parsley and red pepper flakes if desired.
  • Roll up tortillas, slice in half, and serve.
