Marinated Garden Tomato + Crisp Cucumber Summer Salad

Ingredients 

  • 1-1/2 lbs. mixed colors and sizes, fresh garden tomatoes, cut into wedges
  • 2 large garden cucumbers, peeled and sliced into 1/4"
  • 1 medium white onion, peeled and thinly sliced
  • 2 Tbsps apple cider vinegar
  • 2 Tbsps extra-virgin olive oil
  • 1 Tbsp raw honey
  • 1 tsp sea salt, or to taste
  • 1/2 tsp freshly ground black pepper

Instructions 

  • Whisk together ACV, EVOO, honey, salt & pepper.
  • Add tomatoes, cucumbers, and onions into a large glass bowl. Drizzle with your ACV mixture. Gently stir to combine.
  • Refrigerate covered at least 2 hours, or up to 8 hours before serving.
  • Serve cold.
