Place the kale in a large bowl together with, fresh lemon juice, sea salt and pepper.
Using your hands, massage the leaves for about 4 minutes to make the kale super tender.
Drizzle with olive oil, and your raw honey/pure maple, then give it another good stir.
Allow kale to sit and rest while you prep the rest of the ingredients.
Add in your apples, celery and radish and toss to combine.
Sprinkle with sesame seeds if desired.
