Preheat your oven to 400 degrees f.
Place parchment paper on a large baking tray.
Brush or rub your sweet potatoes with oil then wrap tightly in parchment paper or foil and bake for about 50 minutes.
Once potatoes pierce easily with a knife, remove them from the oven. Allow to cool until you can safely handle them.
Carefully unwrap your sweet potatoes and cut in half lengthways.
Spread marinara over your potatoes and top with cheese, onion, red bell pepper, olives, salami, and chili flakes as desired.
Place back into your oven and bake for 10-15 minutes or just until the cheese has melted and the salami/pepperoni is crispy.
Carefully remove them from the oven, serve and enjoy!
