Mexican-Inspired Beef & Veggie Skillet

Ingredients

  • 1 Tbsp avocado oil or olive oil
  • 1 large onion diced
  • 1 zucchini cut in half lengthwise and sliced
  • 1 summer squash cut in half lengthwise and sliced
  • 2 bell peppers seeded and diced
  • 2 Tbsps homemade taco seasoning divided
  • 1-1/2 lbs lean ground beef
  • 1 x 15oz can black beans drained rinsed
  • 1 x 8 oz jar green or red salsa
  • 1 clove of fresh garlic minced
  • 3 green onions sliced
  • a handful of fresh parsley or cilantro chopped
  • corn chips if desired

Instructions

  • Heat the oil in a large skillet over medium-high heat.
  • Sauté the onion, zucchini, squash, and peppers for about 4 minutes. Stir in half of the taco seasoning and continue to cook for 1 minute longer. Set veggies aside on a plate.
  • Add your ground beef into the skillet and cook while breaking it up with a wooden spoon until no longer pink. Drain any excess grease. Sprinkle cooked beef with remaining taco seasoning, then stir to incorporate.
  • Stir in the beans, salsa, and minced garlic, then continue to cook for 3 minutes.
  • Return the veggies back into the skillet, stir to heat, then garnish with green onions, freshly chopped herbs, and chips as desired.
