Ingredients

  • 2 cups unsweetened coconut yogurt or Greek yogurt
  • 1 cup unsweetened shredded coconut flakes let's do organic brand
  • 1/2 cup pure maple syrup or raw honey
  • 1 tsp vanilla extract
  • 1-1/2 cups fresh strawberries
  • 1-1/2 cups fresh pineapple chunks
  • 2 Tbsps chia seeds
  • 12 large popsicle molds

Instructions

  • Place your yogurt, shredded coconut, maple syrup, and vanilla into a blender and process until very well blended.
  • Divide this mixture equally among the bottom of your popsicle molds (leaving plenty of space for the remaining layers) then freeze for an hour.
  • In your blender, add the strawberries and 1 Tablespoon of chia seeds and blend until smooth.
  • Pour or spoon this strawberry mixture over the frozen coconut mixture into the molds. Freeze for another hour.
  • Repeat the blending process with the pineapple and 1 Tablespoon chia seeds.
  • Insert a stick into each mold and freeze for 3-4 hours, or until firm.
  • Once frozen, serve. Stays good in the freezer for 1 month.
