No-Bake Chocolate Quinoa Crispy Treats

Ingredients

  • 1 cup high quality dark chocolate chips or lily's brand: cleanfoodcrush.com/lilys
  • 1 Tbsp unrefined coconut oil melted
  • 1/4 cup unsweetened shredded coconut
  • 1 1/4 cup puffed quinoa

Instructions

  • In a large mixing bowl, combine the melted coconut oil, with melted chocolate until well incorporated.
  • Fold in the shredded coconut and puffed quinoa. 
  • Using a cookie scoop, scoop about 8 balls on a parchment lined baking sheet and refrigerate for about 20 minutes until chocolate sets.
  • Enjoy immediately, or store in the refrigerator in a sealed container.
