Nut Butter Chocolate Chip Energy Balls

Ingredients 

  • 3/4 cup almond flour
  • 1/4 cup ground flaxseed
  • 1/4 cup coconut flour
  • 1/4 cup oat flour, ground oats
  • 1 Tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • pinch of sea salt
  • 1/2 cup nut butter of choice
  • 1/4 cup maple syrup or raw honey
  • 1 tsp pure vanilla extract
  • 1/3 cup dairy-free, mini chocolate chips

Instructions 

  • Add almond flour, flaxseed meal, coconut flour, oat flour, chia seeds, cinnamon and sea salt into your food processor.
  • Pulse a few times until well combined.
  • Add in the nut butter, maple syrup or honey and vanilla extract.
  • Process until you have a sticky mixture that holds together well.
  • Transfer to a bowl and stir in the chocolate chips.
  • Using a cookie scoop to get even balls, scoop the mixture into your palms and roll it to form a round ball.
  • Repeat with remaining mixture, you should have right around 12 energy balls.
  • Store in a container fitted with a lid and refrigerate for up to 2 weeks, or freeze for up to 2 months.
  • Enjoy!
