Parmesan Baked Zucchini Rounds

Ingredients 

  • 2 medium zucchini, sliced into 1/2" rounds
  • 2 Tbsps melted ghee or clarified butter
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic salt
  • 1/3 cup ground parmesan cheese
  • ground black pepper, to taste

Instructions 

  • Preheat your oven to 425 degrees f. then line 2 large baking trays with parchment paper.
  • Add zucchini slices to a large bowl.
  • Sprinkle with seasonings, ground parmesan and drizzle with melted butter/ghee. Toss to get your zucchini coated.
  • Lightly press any remaining seasonings into your zucchini as your removing them from the bowl.
  • Divide the coated zucchini rounds between the trays leaving space between each, then bake for 8-10 minutes, or until zucchini is tender crisp.
