PB & J Energy Bites

Servings: 10 -12 balls

Ingredients

  • 1-1/2 cups oat flour or ground oats
  • 1 cup all natural creamy peanut butter
  • 1/2 cup pure maple syrup or raw honey
  • 6 tsps no sugar added strawberry or raspberry jam

Instructions

  • In a mixing bowl add your ground oats, peanut butter and maple syrup. Stir thoroughly to combine well.
  • Take a spoonful of the mixture and roll it between your palms into a ball. Using your thumb shape it like a bird's nest (as shown in the photos), so you create space for the filling.
  • Add about 1/2 teaspoon of jam in center of each nest, then gently wrap and mold the peanut butter mixture around to close the ball.
  • Repeat with remaining dough and jam. You should have about 10-12 balls once finished.
  • Refrigerate 30 minutes then serve.
  • Keep refrigerated in an air tight container for up to 10 days, or freeze for up to 2 months.
