Preheat your oven to 350 degrees f. and lightly grease an 8 x 10 - inch baking dish with coconut oil or ghee.
In a large mixing bowl, add the eggs together with the melted clarified butter or ghee, maple syrup, or honey, milk, and peanut butter.
Whisk well to combine. Add in the rolled oats, baking powder, vanilla extract, cinnamon, and sea salt. Stir with a spatula to fully incorporate.
Pour your mixture into the prepared baking dish and bake for 30 - 40 minutes. Keep an eye on it those last few minutes.
Once the oatmeal is finished baking and just set in the middle, let it cool for a few minutes.
Slice into 8 servings and top with your fresh strawberries & bananas.
