In a large bowl, combine oats, puffed quinoa, sliced almonds, and raisins.
Line an 8x8 pan with parchment paper and set aside.
In a small saucepan, whisk together coconut oil, maple syrup/honey, peanut butter and vanilla.
Heat over low heat just until it starts bubbling, stirring frequently.
Remove from heat, then pour over the oat mixture in your bowl and stir until well combined.
Once cool enough, you can even get your hands in there to get these ingredients incorporated really well!
You might have to add a couple of tablespoons of water to make the mixture stick together.
Place this mixture into your prepared pan and gently, but firmly press into the pan evenly, making sure to reach the corners.
Refrigerate overnight.
Cut into 8 bars and drizzle with melted chocolate as shown.
I wrap mine in plastic wrap and store in the fridge.
These store great in the freezer too! (lasts in the fridge for 2 weeks, or freezer for 2 months.)
