Peanut Butter Rice Cakes

Ingredients 

  • 4 sea salted organic brown rice cakes
  • 4 Tbsps crunchy peanut butter
  • 1/3 cup melted dark chocolate
  • a handful of peanuts, coarsely chopped - optional

Instructions 

  • Spread the top of each rice cake with one tablespoon of peanut butter and lay them on a sheet pan.
  • Freeze for about 15 minutes while you melt your chocolate chips.
  • Melt your chocolate in a double boiler or in the microwave, stirring every 20 seconds.
  • Next, spoon over some melted chocolate to top the peanut butter as shown.
  • Sprinkle with peanuts if desired and freeze for 5 more minutes, or until the chocolate is set.
