Pine Nut + Basil Guacamole

Ingredients

  • 1/4 cup pine nuts toasted
  • 1-2 fresh garlic cloves minced
  • sea salt to taste, about 1/2 teaspoon
  • 1/2 cup loosely packed fresh basil leaves roughly chopped
  • 3 medium ripe avocados peeled, seeded and cubed
  • 3 Tbsps freshly squeezed lime or lemon juice

Instructions

  • Heat a small skillet over low heat. Add in your pine nuts and cook stirring constantly until golden, just a few minutes.
  • Pound the garlic in a pestle and mortar with a tiny pinch of sea salt.
  • Add in your basil leaves, then mash it all into a paste.
  • Alternatively you can pulse in a food processor.
  • Add in your avocados and mash until smooth.
  • Stir in the lime juice, taste test and season with sea salt and pepper if desired.
  • Dip fresh slices of veggies such as mini peppers, cucumbers, celery, carrots, broccoli etc for a healthy snack. Or dollop on top of Ezekiel toast or tacos for a unique flavor combination.
