Protein Packed Breakfast Egg Wrap

Ingredients 

  • 1/2 tbsp olive or avocado oil
  • 2 large eggs
  • 2 Tbsps milk of choice
  • sea salt and ground pepper, to taste
  • 2 Tbsps oat flour, or ground oats
  • 1 thin slice cheddar cheese, cut in half
  • 2 thin slices nitrate-free deli turkey
  • 1 tomato, thinly sliced
  • avocado, thinly sliced
  • 1/2 cup fresh spinach

Instructions 

  • Heat the oil in a skillet over medium-high heat.
  • In a medium bowl, whisk your eggs together with the milk, sea salt, and pepper. Add the oat flour and whisk well to combine
  • Pour your egg mixture into your hot skillet and tilt the pan to evenly coat the bottom; Cook for 3-5 minutes, or until the bottom is lightly browned and the center is set. Flip your wrap and cook for 1 minute more.
  • Once it’s done cooking, slide it onto a plate. Immediately top with cheese, fresh spinach, tomato slices, deli turkey and avocado. Roll up, cut it in half and serve!
