Quick + Easy Pickle Sandwich for a Super Fun Lunch or Snack Idea!

Ingredients 

  • 4 large pickles
  • dijon mustard, or regular mustard,
  • organic ketchup, and/or avocado mayonnaise
  • 12 slices nitrate free turkey, or ham
  • thin sliced cheese
  • 1 or 2 large tomatoes, sliced and halved

Instructions 

  • Place one pickle on your cutting board.
  • Using a very sharp chef's knife, carefully slice it in half lengthwise as shown.
  • Using a spoon, scoop out the seeds of each pickle halve into a bowl to make a bit of room for your fillings.
  • Next, place your pickle halves cut side up on the cutting board.
  • Squeeze some ketchup or mayonnaise and mustard on one half.
  • Top with slices of turkey or ham, a slice of cheese and tomatoes.
  • Add the other pickle half on top to complete the sandwich.
  • Insert a toothpick into the middle to make it easier to serve.
  • Repeat with remaining pickles.
  • Serve and enjoy!
