Place one pickle on your cutting board.
Using a very sharp chef's knife, carefully slice it in half lengthwise as shown.
Using a spoon, scoop out the seeds of each pickle halve into a bowl to make a bit of room for your fillings.
Next, place your pickle halves cut side up on the cutting board.
Squeeze some ketchup or mayonnaise and mustard on one half.
Top with slices of turkey or ham, a slice of cheese and tomatoes.
Add the other pickle half on top to complete the sandwich.
Insert a toothpick into the middle to make it easier to serve.
Repeat with remaining pickles.
