Quick & Easy Salmon Kabobs

Ingredients

  • 10-inch bamboo skewers or wooden skewers
  • 1/2 cup fresh pesto sauce https://cleanfoodcrush.com/delicious-fresh-homemade-pesto/
  • 1-1/2 lbs. skinless salmon filet cut into 1-1/4-inch pieces
  • sea salt and ground pepper to taste
  • 2 fresh lemons very thinly sliced into rounds
  • 1/2 tsp crushed red pepper flakes

Instructions

  • Soak your wooden skewers in water for at least 20 minutes, so they don't burn on the grill.
  • In a large bowl, toss your salmon cubes with your fresh pesto sauce, coating well.
  • Sprinkle with a pinch of sea salt and pepper. Allow to marinate for 20 minutes, covered in the refrigerator.
  • Thread your salmon onto bamboo skewers alternating with your thin lemon slices as shown.
  • Preheat your outdoor grill or an indoor grill pan to medium and grill the salmon skewers for 6-8 minutes per total, flipping halfway.
