Raspberry Yogurt Layered Popsicles

These Raspberry Yogurt Popsicles are a sweet and healthy breakfast or summertime treat that's perfect for the whole family, containing chia seeds, raspberries, and yogurt!

Ingredients 

  • 2 cups fresh or frozen raspberries, thawed
  • 2 Tbsps chia seeds
  • 1/3 cup raw honey or pure maple syrup, divided
  • 1 cup plain Greek yogurt or coconut yogurt
  • 1 tsp vanilla extract
  • 1/2 cup granola

You'll need:

  • popsicle molds
  • popsicle sticks

Instructions 

  • Mash the raspberries in a bowl using a fork. Add in half of the honey and all of the chia seeds.
  • Stir to combine and allow this mixture to sit while you make the yogurt base.
  • In a second bowl, whisk your yogurt with the remaining honey and vanilla.
  • To assemble your pops, divide the raspberry mixture equally among your popsicle molds.
  • Add spoonsful of vanilla yogurt then sprinkle the yogurt with granola.
  • Freeze until solid.
