Salmon + Mango Power Bowls

Ingredients 

  • Ingredients:
  • 1 cup cooked brown or wild rice
  • 2 cooked salmon filets
  • 1 ripe mango, diced
  • 1 small avocado, diced
  • 4 green onions, sliced

Dressing:

  • 2 Tbsps extra virgin olive oil
  • 2 Tbsps freshly squeezed lime juice
  • 2 Tbsps rice vinegar
  • 1/2 cup ripe mango
  • 1 Tbsp hot sauce
  • sea salt and ground black pepper, to taste

Instructions 

  • Divide your cooked rice equally between 2 serving bowls.
  • Top with flaked salmon, diced mango, and avocado.
  • In a small food processor, add all the ingredients for your dressing and pulse until smooth.
  • Drizzle dressing over the bowls, then sprinkle with green onions.
  • Enjoy!
