Sautéed Fresh Lemony Spinach

Ingredients 

  • 1-2 Tbsps olive oil, avocado oil, or unrefined coconut oil
  • 24 oz fresh spinach
  • 3 fresh garlic cloves, chopped
  • 1/2 a fresh lemon, freshly squeezed
  • 1 Tbsp fresh lemon zest
  • sea salt and freshly ground black pepper

Instructions 

  • Thoroughly rinse your spinach and dry completely in a salad spinner.
  • Heat your oil in a large heavy-bottomed skillet.
  • Add in garlic and cook until fragrant, for about 1 minute.
  • Add in half of your spinach and stir to wilt. Stir in the remaining half of the fresh spinach.
  • Drizzle in the fresh lemon juice and stir constantly until all spinach is just wilted.
  • Remove from the heat and season with lemon zest, sea salt and pepper to taste.
  • Serve and enjoy!
