Sesame Roasted Baby Zucchini

Ingredients 

  • 2 lbs baby/ young zucchini
  • 1 Tbsp sesame oil or avocado oil
  • 1 tsp garlic powder
  • sea salt and ground pepper, to taste
  • raw sesame seeds, toasted at home if you like

To serve:

  • fresh lemon wedges
  • plain Greek yogurt or unsweetened coconut yogurt
  • fresh chopped cilantro or parsley

Instructions 

  • Preheat your oven to 425 degrees f. and line a large baking sheet with parchment paper.
  • Slice the baby zucchini diagonally into 1-inch pieces and transfer to your baking sheet.
  • Drizzle with the oil and season with the seasonings. Toss well to coat, then spread them in a single layer.
  • Roast for 15 to 20 minutes, or until lightly golden brown on top.
  • Sprinkle with sesame seeds as desired and serve with lemon or lime wedges.
