Preheat your oven to 375 degrees f.
In a medium bowl. Whisk together all the ingredients for your Caesar dressing. Taste test, adjust any ingredients to your personal preference (I like additional garlic & lemon), then set aside.
Place the cubed bread onto a sheet pan and lightly drizzle with oil.
Sprinkle with sea salt, freshly ground black pepper, garlic powder, and toss well to coat all of the croutons. Roast for 15 minutes, stirring every 5 minutes. Remove from the oven once they are nice and crispy.
While your croutons are roasting, prepare the shaved brussels sprouts (full step-by-step guide above in this post) and place them in a large serving bowl.
Add cooked chicken and drizzle everything with your homemade dressing. Toss well to combine.
Top with freshly grated parmesan and crispy croutons.
