Shaved Brussels Sprouts Caesar Salad

Ingredients

Salad:

  • 1 lb. trimmed and halved brussels sprouts
  • 4 slices Ezekiel bread cut into small cubes
  • 2 Tbsps avocado oil or olive oil
  • ½ tsp sea salt
  • ¼ tsp pepper
  • 1/2 tsp garlic powder
  • 1 lb. cooked chopped/shredded chicken
  • ¼ cup freshly grated parmesan

Dressing:

  • 1/3 cup homemade mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 Tbsps freshly squeezed lemon juice
  • 1 fresh garlic clove pressed
  • 1 Tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp freshly ground black pepper
  • pinch of sea salt

Instructions

  • Preheat your oven to 375 degrees f.
  • In a medium bowl. Whisk together all the ingredients for your Caesar dressing. Taste test, adjust any ingredients to your personal preference (I like additional garlic & lemon), then set aside.
  • Place the cubed bread onto a sheet pan and lightly drizzle with oil.
  • Sprinkle with sea salt, freshly ground black pepper, garlic powder, and toss well to coat all of the croutons. Roast for 15 minutes, stirring every 5 minutes. Remove from the oven once they are nice and crispy.
  • While your croutons are roasting, prepare the shaved brussels sprouts (full step-by-step guide above in this post) and place them in a large serving bowl.
  • Add cooked chicken and drizzle everything with your homemade dressing. Toss well to combine.
  • Top with freshly grated parmesan and crispy croutons.
