Sheet-Pan Pineapple + Shrimp Fajitas

Ingredients

  • 1.5 lbs raw large shrimp peeled and deveined
  • 1 Tbsp avocado oil or olive oil
  • 1/2 small pineapple peeled and sliced into thin bite-sized pieces
  • 3 large bell peppers mixed colors, sliced into strips
  • 1 large sweet onion sliced into strips
  • 1.5 Tbsps fajita seasoning mix
  • 1 Tbsp fresh squeezed lime juice
  • 1/2 tsp lime zest
  • a handful of fresh cilantro leaves chopped
  • 6-8 sprouted corn or gluten-free flour tortillas, depending on your preferences

Instructions

  • Preheat your oven to 375 degrees f. and spray a baking sheet with nonstick spray.
  • In a large bowl, add peppers, onions, pineapple, 1 tablespoon of the fajita seasoning, oil, sea salt and pepper to taste. Toss gently to coat well.
  • Spread mixture evenly on the prepared baking sheet and bake in your preheated oven for about 12 minutes.
  • Meanwhile, in the large bowl, combine shrimp, lime juice & zest and the remaining 1/2 Tablespoon of fajita seasoning. Toss gently to coat.
  • Remove the baking sheet from the oven, and sprinkle evenly with shrimp.
  • Bake for an additional 5-7 minutes, or until shrimp are pink and cooked through.
  • Garnish with fresh chopped cilantro and enjoy with warm tortillas.
