Shrimp + Cobb Jar Salad

Ingredients

  • 2 Tbsp chopped avocado
  • 8 grape tomatoes
  • 1 Tbsp red onion chopped
  • 2 Tbsp chopped cucumber
  • 1 cup of romaine lettuce and baby spinach mix
  • 1-2 Tbsp crumbled feta
  • 6-8 cooked shrimp
  • 1 boiled egg chopped

Yogurt lime dressing:

  • 2 Tbsp plain Greek yogurt
  • 1 Tbsp lime juice
  • 1/4 tsp fresh squeezed lime zest
  • sea salt and pepper to your taste
  • 1 Tbsp extra virgin olive or avocado oil

Instructions

  • In a small glass bowl, whisk all the dressing ingredients.
  • Layer all items in order starting with the dressing at the bottom - going up, then seal with the lid.
  • You can store the salad jars in the fridge for up to 3 days.
  • **tip be sure all of your veggies are completely dry - any moisture will decrease freshness.
