Silky Pumpkin Pudding

Servings: 3 -4 servings

Ingredients

  • 1/2 cup warm water
  • 1/3 oz gelatin powder
  • 1/2 cup pureed pure pumpkin
  • 1 cup canned unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1 Tbsp raw honey or pure maple syrup
  • 1 tsp cinnamon
  • 1 scoop collagen powder optional

Instructions

  • In a medium bowl, combine your warm water and the gelatin powder. Stir gently. Allow the gelatin to bloom for five minutes.
  • Meanwhile, in a small blender add your pumpkin puree, coconut milk, honey or maple syrup, vanilla, cinnamon, and collagen (if using). Blend until smooth.
  • Adding little by little at first, whisk or blend the pumpkin mixture into your gelatin mixture.
  • Pour this combined mixture equally into ramekins or other small serving bowls.
  • Refrigerate (covered) for at least three hours or until set.
