In a medium bowl, combine your warm water and the gelatin powder. Stir gently. Allow the gelatin to bloom for five minutes.
Meanwhile, in a small blender add your pumpkin puree, coconut milk, honey or maple syrup, vanilla, cinnamon, and collagen (if using). Blend until smooth.
Adding little by little at first, whisk or blend the pumpkin mixture into your gelatin mixture.
Pour this combined mixture equally into ramekins or other small serving bowls.
Refrigerate (covered) for at least three hours or until set.
