Simple Avocado Tuna Salad

You will LOVE the Protein-packed goodness of this Simple Avocado Tuna Salad! It is full of creamy avocado, crunchy celery, and the brininess of capers. Use it for these tuna cucumber bites, or layer it on a slice of Ezekiel bread for a tuna salad sandwich feel!

Ingredients 

  • 2 large ripe avocados, diced
  • 1 fresh lime, juiced
  • 3, 5 ozs tuna in water, flaked, drained well
  • 1 medium red onion, small diced
  • 3 celery ribs, small diced
  • 2 Tbsps capers, chopped
  • 1 fresh garlic clove, pressed or minced
  • one small bunch of fresh cilantro leaves, minced
  • a handful of fresh dill, minced
  • sea salt and ground pepper, to taste

Instructions 

  • Start by dicing your avocado; place them in a large bowl and drizzle in your fresh lime juice. Gently toss to coat.
  • Add the tuna, onion, celery, capers, garlic, and fresh herbs.
  • Season with sea salt and pepper to taste, then gently toss to combine.
  • Best enjoyed and consumed the same day, but it's still good for about 2 or 3 days in the fridge as long as the avocado is coated with plenty of fresh lime juice.
