Sliced Garden Tomato Salad

Ingredients 

  • 2 Tbsps extra-virgin olive oil
  • 2 Tbsps high-quality balsamic vinegar
  • 1 Tbsp raw honey
  • sea salt and ground black pepper, to taste
  • 1 lb ripe garden tomatoes
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta
  • 1/2 cup pitted green olives
  • 2 Tbsps fresh chopped parsley or basil leaves

Instructions 

  • In a small bowl or jar, whisk the oil, balsamic, honey, and a generous pinch of sea salt and pepper.
  • Slice your tomatoes as desired and very thinly slice your red onions then arrange them nicely on a platter as shown.
  • Drizzle with your balsamic dressing, then top with crumbled feta, olives, and fresh herbs.
  • Enjoy immediately, or cover and serve within 2 hours.
