Sliced Summer Detox Salad Recipe

Ingredients 

  • 2 English cucumbers, thin sliced
  • 10 radishes, sliced thin
  • 1 small red onion, thin sliced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 orange bell peppers, thinly sliced
  • 3 Tbsp. extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 2 tsp. apple cider vinegar
  • 2 fresh garlic cloves, pressed
  • Sea salt and fresh black pepper, to taste

Instructions 

  • In a large glass salad bowl, gently combine the cucumbers, radishes, onions, bell pepper and parsley.
  • In a separate bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and minced garlic. Season with sea salt and pepper, to taste.
  • Pour the vinaigrette over the salad and toss gently to combine.
  • Serve immediately.
