1large head cauliflower, broken into larger florets
2Tbspsavocado or olive oil
1fresh lemon, zest and juice
2tspsgarlic salt, or to taste
2Tbspsminced fresh parsley, extra to garnish
½cupfreshly grated Parmesan

Instructions
Preheat your oven to 400 degrees f.
Place your large florets in a large bowl.
In a small bowl, whisk together your oil of choice, lemon juice & zest, garlic salt, and parsley.
Drizzle this mixture over your florets and thoroughly toss to coat each.
Transfer the coated florets to a large parchment paper lined baking sheet.
Roast for 25-30 minutes in your preheated oven, just until fork tender.
Remove from the oven and carefully smash each floret using the flat side of a small bowl or cup, until it's flattened to 1/2-inch thickness as shown in the video.
Sprinkle each evenly with parmesan and return to the oven. Continue to roast for 10 minutes, or until nicely melty and browned.
