Spicy Sweet Potato Salad – Excellent Side Dish for BBQ’S!

Ingredients 

  • 4 sweet potatoes, medium diced
  • 2 Tbs extra virgin olive oil
  • 1 pint cherry tomatoes, sliced into halves
  • 2 avocados, diced, & coated with 1 Tbs fresh lime juice
  • 1 cup black beans, rinsed if canned
  • 1/2 cup plain greek yogurt
  • 1 Tbs favorite hot sauce, more or less depending on heat preference
  • 1 tsp ground cumin
  • 1 Tbs apple cider vinegar sea salt and pepper to taste
  • 2 Tbs chopped fresh parsley, cilantro, or chives (use your fav)

Instructions 

  • Preheat oven to 425
  • Toss diced potatoes with olive oil
  • Roast potatoes on flat sheet pan (I line with foil) for about 30 minutes
  • In medium bowl whisk until combined well: yogurt, hot sauce, cumin, vinegar, fresh herbs, and salt & pepper.
  • Gently combine all ingredients in a large bowl
  • Sprinkle with a pinch of fresh herbs
  • Serve immediately or refrigerate covered
