Stone Fruit + Melon Summer Salad

Ingredients

  • 2 cups ripe watermelon chopped
  • 4 ripe apricots pits removed
  • 1 cup cherries pits removed
  • 3 peaches pit removed
  • 1 cup honeydew or cantaloupe chopped
  • 4 plums pit removed
  • 3 Tbsps freshly squeezed lemon juice
  • 2 Tbsps raw honey
  • zest from 1 or 2 fresh lemons
  • fresh mint leaves

Instructions

  • Chop the fruit into smaller pieces so that everything is similar in size.
  • Place all fruit in a bowl.
  • In a small mixing bowl or jar, whisk together lemon juice, honey, and zest. Drizzle over your fruit and toss gently to coat.
  • Serve immediately or refrigerate for 1 hour to cool.
  • Add mint leaves if desired.
  • Enjoy!
