Strawberry Chia Seed Protein Pudding

Our Strawberry Chia Seed Protein Pudding is made with fresh strawberries, unsweetened coconut milk, and protein-rich cottage cheese.

Ingredients 

  • 2 cups fresh or frozen strawberries, thawed slightly
  • 2 cups unsweetened milk of choice
  • 1 cup cottage cheese
  • 1/3 cup raw honey or pure maple syrup
  • 2 tsps vanilla extract
  • 1 cup chia seeds

Optional:

  • protein powder
  • freshly chopped strawberries to garnish

Instructions 

  • In a blender add your strawberries, milk, cottage cheese, honey, and vanilla.
  • Also add your protein powder if using.
  • Blend until smooth.
  • Place the chia seeds in a large bowl and pour your strawberry mixture over the seeds.
  • Whisk until well combined. Allow to sit for about 5 minutes, then whisk together again.
  • Refrigerate (covered) for at least 4 hours or overnight.
  • Divide your mixture equally among four serving cups and garnish as desired.
  • Refrigerate covered tightly for up to 3 days.
