Sweet Meyer Lemon Coconut Macaroon Cookies

Servings: 2 cookies

Ingredients

  • 2 cups unsweetened shredded coconut flakes MUST use “Let’s do Organic” brand for this recipe
  • 2 egg whites
  • Juice of 1 Meyer sweet lemon Not as acidic as regular lemons
  • ¼ tsp vanilla extract
  • 25 drops stevia or your preferred sweetener

Instructions

  • Preheat oven to 350 degrees f. Coat cookie sheet with coconut oil (lightly)
  • In large bowl combine the following ingredients
  • Combine all ingredients very well with a fork. Smash into Tablespoon size balls (I use a Tablespoon cookie scoop) It’s VERY important to press together firmly, so they keep their shape & not crumble during baking.
  • Bake at 350 f for 12-13 minutes, just until sides begin to brown. Enjoy! They are awesome!
