Sweet Potato Meal Prep Bowls

We've combined the natural sweetness of sweet potatoes with the savory goodness of lean ground beef and a tangy homemade dressing.

Ingredients 

Sweet Potatoes:

  • 4 small, sweet potatoes, diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • sea salt and ground pepper, to taste
  • 1 Tbsp avocado oil

Protein:

  • 1 lb. lean ground beef or bison
  • 1 medium sweet onion, diced
  • 3 fresh garlic cloves, pressed
  • sea salt and ground pepper, to taste

Homemade dressing:

  • 1/4 cup homemade mayo
  • 1/4 cup Greek yogurt
  • 2 Tbsps hot sauce
  • 1 Tbsp Dijon mustard

Toppings:

  • 1 head of lettuce, thinly sliced
  • freshly diced tomatoes
  • freshly shredded cheddar cheese
  • small red onion, diced
  • sliced or diced pickles

Instructions 

  • Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
  • Place your diced sweet potatoes on the pan and toss with onion powder, garlic powder, sea salt, pepper, and oil.
  • Arrange in a single layer. Roast for 20-25 minutes, until tender.
  • Meanwhile, heat a large skillet over medium heat. Add the ground beef and cook, stirring and mincing it, for 5 minutes. Add the onion, garlic, sea salt and pepper.
  • Continue to cook until it begins to brown. Drain off excess grease. Cover to keep warm and set aside.
  • To make your sauce, add all the ingredients in a small bowl or jar and whisk until combined well.
  • To assemble your bowls add a layer of your roasted potatoes. Top with warm beef, then sprinkle the cheese. Drizzle with your sauce and top with desired toppings.
