Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
Place your diced sweet potatoes on the pan and toss with onion powder, garlic powder, sea salt, pepper, and oil.
Arrange in a single layer. Roast for 20-25 minutes, until tender.
Meanwhile, heat a large skillet over medium heat. Add the ground beef and cook, stirring and mincing it, for 5 minutes. Add the onion, garlic, sea salt and pepper.
Continue to cook until it begins to brown. Drain off excess grease. Cover to keep warm and set aside.
To make your sauce, add all the ingredients in a small bowl or jar and whisk until combined well.
To assemble your bowls add a layer of your roasted potatoes. Top with warm beef, then sprinkle the cheese. Drizzle with your sauce and top with desired toppings.
