Sweet Potato N’ Egg Skillet Recipe

Ingredients 

  • 2 medium sweet potatoes, cut into 1/2 inch cubes
  • 1/3 cup organic corn, fresh or frozen
  • 2 fresh garlic cloves, minced
  • 2 Tbsp avocado oil, or olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin seed
  • 2 cups fresh baby spinach
  • 4 free range eggs

Instructions 

  • Preheat a large oven safe skillet over medium high heat.
  • Add in oil and diced sweet potato and cook stirring constantly for about 6-8 minutes until brown on all sides. 
  • Season with sea salt and pepper then add seasonings, corn and cook for an additional 2-3 minutes. 
  • Add in garlic and spinach and cook until the spinach is just wilted. 
  • Makes 4 nice little spaces and gently crack the eggs into those spaces.
  • Heat oven to high broil, and set skillet inside with the oven door open just a crack to keep an eye on your eggs.
  • Broil on high for about 3-5 min or until eggs are to your liking.
