Tangy Dill Pickle Hummus

Ingredients

  • 2 x 15.5oz jars garbanzo beans or chickpeas rinsed and drained well or cook your own at home
  • 1/2 cup chopped dill pickles
  • 1/4 cup pickle juice/brine
  • 2 fresh garlic cloves sliced
  • small handful of fresh dill
  • 1/4 cup tahini or sesame paste
  • 1 fresh lemon juiced
  • 1/2 tsp ground coriander seed or to taste
  • 1 tsp sea salt or to taste

To serve:

  • fresh cauliflower florets celery sticks, bell pepper slices, and carrots sticks

Instructions

  • Place all of your hummus ingredients into a high-speed blender. Blend until smooth.
  • Add additional pickle juice or water to thin the dip to your desired consistency, if needed.
  • This hummus will be a bit chunky, which makes it perfect to be served with crunchy veggies.
  • Stores well in an airtight container in the fridge for about 2 days.
