Peel your cucumber, then using a sharp chef's knife carefully cut into 1/3-inch slices. You should have about 24 slices.
In a bowl, add your tuna, yogurt, paprika, sea salt, pepper and chives.
Using a microplane, grate the lemon zest, and juice your lemon. Pour squeezed lemon and the zest over the tuna mixture.
Mix until your tuna salad mixture is well combined.
Lay half of the cucumber slices on a large platter, and add small spoonful of your tuna salad onto each. Top with the remaining cucumber slices.
Insert skewers into the middle of each one for easier serving, as shown in the video.
