[VIDEO] BLT Egg Wraps

Ingredients

  • 4 large eggs
  • 2 Tbsps plain greek yogurt
  • 1/4 cup oat flour or ground oats
  • sea salt and ground pepper to your taste
  • 4 tsps olive or avocado oil divided
  • 1/4 cup grated cheese of choice divided
  • 2 large handfuls of chopped lettuce or spinach
  • 4 thin slices of cooked bacon
  • 1 large vine-ripened tomato thinly sliced
  • 1 small red onion thinly sliced

Instructions

  • In a medium bowl crack the eggs. Add in the yogurt, oat flour, sea salt, and pepper to taste. Whisk well to combine.
  • Preheat 2 tsp of oil in a large skillet over medium-low heat.
  • Pour half of the beaten eggs and allow them to spread to entirely coat the bottom of the skillet.
  • Cook for 3-4 minutes over medium-low heat, then carefully flip using a large spatula and sprinkle with half of the cheese. Allow it to cook for 2 more minutes, just until the cheese melts.
  • Transfer your egg 'wrap' to a sheet of butcher paper or wax paper.
  • Top with a handful of chopped lettuce or spinach, cooked bacon, a couple of slices of tomato, and red onion.
  • Roll it up! Use the paper to help hold everything together while wrapping it up tight.
  • Repeat with the remaining ingredients to make a second wrap.
  • Enjoy!
