Watermelon + Basil + Mozzarella Skewers

Servings: 10 skewers

Ingredients

  • ½ medium seedless watermelon
  • fresh basil leaves
  • 2 cups mini mozzarella balls
  • 10, 6- inch bamboo skewers

Optional:

  • sea salt and freshly cracked black pepper
  • high-quality balsamic vinegar
  • extra virgin olive oil

Instructions

  • Cut the ripe watermelon into 1 - inch cubes.
  • To assemble your skewers, thread a mozzarella ball, followed by a few leaves of fresh basil, a watermelon cube, fresh basil, another watermelon cube, fresh basil, and the last ball of mozzarella.
  • Repeat with the remaining ingredients as shown.
  • Arrange your skewers onto a serving platter then sprinkle lightly with optional ingredients as desired and serve immediately.
