Whisk your balsamic vinegar and honey together in a very small saucepan over high heat. Bring to a boil, then immediately reduce heat to low, and simmer until the vinegar mixture has reduced about 8 minutes. Set aside to cool completely.
In a large serving bowl add the watermelon, blackberries, shaved parmesan, and pecans.
Drizzle with your homemade balsamic glaze as desired and gently toss.
Serve immediately and enjoy!
