Zesty Purple Cabbage Slaw

Ingredients 

  • 1/2 medium purple cabbage, thinly shredded
  • 2 large carrots, thinly shredded
  • 1 bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 fresh cloves garlic, minced
  • a bunch of fresh cilantro, chopped, divided
  • 1/2 cup plain Greek yogurt or unsweetened coconut yogurt
  • 1 Tbsp dijon mustard
  • 1 Tbsps apple cider vinegar
  • 1/4 cup homemade mayo
  • sea salt and ground black pepper, to taste

Instructions 

  • Place your shredded cabbage, carrots, pepper, and onion, in a large bowl.
  • Add the garlic, half of the cilantro, yogurt, mustard, mayo, and apple cider vinegar.
  • Toss well to coat, then season to taste with sea salt and pepper and garnish with remaining cilantro.
  • Stays good in a sealed container in the fridge for up to 3 days.
