Zoodles tossed with my FAVORITE Chimichurri sauce!

Ingredients

  • 1 large bunch flat leaf/Italian parsley large stems removed
  • 8 cloves garlic minced
  • 3/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar or apple cider vinegar
  • 2 Tbps diced red onion
  • 1 Tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • 1/2 tsp sea salt

Instructions

  • Place all ingredients in a food processor or high powered blender.
  • Pulse until you have a thick, smooth consistency.
