Spray or brush an 8x8 baking dish with avocado oil or olive oil.
Preheat your oven to 425 degrees f.
Shred the zucchini and transfer to a colander. Season with salt, toss to combine and allow it to sit for 15 minutes, stirring occasionally. Squeeze out as much water as possible from your shredded zucchini and then place it in a large bowl.
Add in the parmesan, eggs, half of the mozzarella, and all seasonings.
Stir thoroughly to combine, then transfer the mixture into your prepared 8x8 baking dish.
Bake for 20 minutes.
Once the time is up, carefully remove the dish from the oven and top evenly with the remaining ingredients as shown in the video. You can add extra shredded meat, extra veggies, or additional marinara sauce to fit your own personal preferences.
Return your casserole to the oven and bake for about 15 minutes, until the cheese is melted.
