- 1 lb. lean ground turkey, or grass-fed beef
- 2 tsps avocado oil, or extra virgin olive oil
- 1 large white onion, diced
- 2 fresh garlic cloves, minced or pressed
- 1 tsp cumin
- 1/4 tsp chili powder, or to taste
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 15 ounces black beans, rinsed and drained
- 1.5 cups frozen organic corn
- 15- ounce jar diced tomatoes, in juice
- 1/4 cup shredded cheese, optional
- a handful of fresh cilantro leaves, chopped
- 1-2 jalapenos, sliced
Prevent your screen from going dark
Preheat your oven to 350 degrees f.
Heat oil in a large oven-safe skillet over medium-high heat.
Add onions and sauté until softens, about 3 minutes.
Then, add in minced garlic, ground turkey and all spices, and cook for 5-6 minutes, breaking the meat as you go.
Gently stir in the beans, corn, and diced tomatoes with juice, then sprinkle with cheese.
Place in your preheated oven and bake for 10-12 minutes, or until cheese is melted and bubbly.
Carefully remove from the oven...the whole pan including the handle is very HOT!
Garnish with fresh chopped cilantro and jalapeño slices.
