Place a heat-safe bowl over a pot with boiling water. Make sure the water doesn't touch the bottom of the bowl.
Add in the chocolate chips and allow them to melt, stirring occasionally until smooth.
Alternatively, you can melt the chocolate chips in the microwave. Add them to a microwave-safe bowl and heat in 15-second increments until chocolate is fully melted, making sure you stir after each one.
Set aside a few pinches of each ingredient to sprinkle on top just for aesthetics (to make it prettier) if desired.
Once your toasted quinoa has cooled, add it to the bowl with your melted chocolate. Stir in the cranberries and orange zest, minus any you're using as a topping.
Pour the chocolate mixture into the prepared sheet pan then spread into a 1/4-inch layer as shown in the video. Sprinkle with any additional ingredients you set aside, if desired.
Refrigerate for 1 hour, or until fully set.
Slice or break your chocolate bark into pieces and serve.
