5-Minute Leftover Chicken Spinach Salad

Ingredients 

  • 8 heaping cups of fresh baby spinach
  • 4 green onions, sliced
  • 2 Tbsps extra-virgin olive oil
  • 1 fresh lemon, juiced
  • 1 or 2 cloves of fresh garlic, minced
  • 1 tsp red chili flakes, or to taste
  • sea salt and ground pepper, to taste
  • 1 cup shredded carrots
  • 2 cups shredded cooked chicken
  • 2 small garden cucumbers, chopped
  • 1/2 cup pitted green olives, halved
  • 1/4 cup shelled pistachio, coarsely chopped

Instructions 

  • In a large bowl whisk the oil, lemon juice, garlic, and chili flakes, with a pinch of sea salt and pepper. Add the spinach and green onions then toss well to coat.
  • Top with carrots, chicken, cucumber, olives, and pistachios.
  • Give it all another toss and enjoy immediately!
