5-Minute Leftover Chicken Spinach Salad

Grab your ingredients out of the fridge, whisk your simple dressing right into the bottom of a big ole salad bowl, pile in your ingredients, toss everything well then dive in. It’s really that easy.

Sometimes we just need a little inspiration to create the spark that makes us want to jump into the kitchen and create a bright-fresh healthy meal!

➡️ Question: Is rotisserie chicken healthy?

➡️ Answer: Well, compared with most drive-thru foods…in my opinion, yes, but there are some important things to keep in mind when shopping for rotisserie chicken.

Many rotisserie chickens are injected with seasonings that contain sodium phosphate, modified food starches, potato dextrin, carrageenan, and sugars.

I highly suggest that you read the ingredient labels and do some research if you’re concerned about preservatives in your diet.

Whole Foods grocers offer an organic, hormone-free, and no added salt, rotisserie chicken that is wonderful.

Another option:

I often keep shredded chicken that was cooked in my crockpot, on hand in the fridge and the freezer for quick recipes like this, but in a pinch, you can use a rotisserie chicken.

Once the chicken is cooked through, simply shred with 2 forks, OR shred for a few seconds in your Kitchenaid mixer with the paddle attachment.

Make SURE that you actually love the taste of the olive oil that you use for your salads such as this because your salad will come out tasting very much like the oil you use. They each have their own unique flavor.

The fresh lemon zest really elevates your salad game! Don’t skip it!

🍋 ALWAYS use freshly-squeezed lemon juice from an actual fresh lemon. Bottled lemon juice from the store will give your salad a strange metallic or overly acidic taste. We want this to taste super bright and fresh.

4 servings

Ingredients:

  • 8 heaping cups of fresh baby spinach
  • 4 green onions, sliced
  • 2 Tbsps extra-virgin olive oil
  • 1 fresh lemon, juiced
  • 1 or 2 cloves of fresh garlic, minced
  • 1 tsp red chili flakes, or to taste
  • sea salt and ground pepper, to taste
  • 1 cup shredded carrots
  • 2 cups shredded cooked chicken
  • 2 small garden cucumbers, chopped
  • 1/2 cup pitted green olives, halved
  • 1/4 cup shelled pistachio, coarsely chopped

Instructions:

In a large bowl whisk the oil, lemon juice, garlic, and chili flakes, with a pinch of sea salt and pepper. Add the spinach and green onions then toss well to coat.

Top with carrots, chicken, cucumber, olives, and pistachios.

Give it all another toss and enjoy immediately!
