Air Fryer Apple Sausage and Veggies

Air fryer apple sausage and veggies is a quick 15 minute meal filled with healthy protein, zucchini, onions, apples, and bell peppers. All caramelized for deep flavor and perfect for an easy weeknight meal option.

Ingredients 

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 2 small zucchinis, cut into 1-inch tick half moons
  • 1 large Granny Smith apple, cut into 1-inch cubes
  • 1 lb apple chicken sausage (fully cooked, sliced), sliced into 1-inch slices
  • 1 Tbsp Italian seasoning
  • sea salt and black pepper, to taste
  • 1 Tbsp extra-virgin olive or avocado oil

Instructions 

  • Chop all your veggies, apple, and sausage into similar sized pieces to ensure even cooking.
  • Transfer everything into a large bowl and sprinkle with Italian seasoning. Season with a pinch of sea salt and pepper if desired.
  • Drizzle with your oil and stir well to combine.
  • Preheat your air fryer to 390 degrees f.
  • Add the seasoned ingredients and sausage to your air fryer basket in an even layer then cook for 10-12 minutes, shaking the basket halfway through the cooking time.
  • Serve hot over cooked brown rice, quinoa, or cauliflower rice if desired.
