1large red onion, peeled and cut into 1-inch pieces
2small zucchinis, cut into 1-inch tick half moons
1large Granny Smith apple, cut into 1-inch cubes
1lbapple chicken sausage, sliced into 1-inch slices
1TbspItalian seasoning
sea salt and black pepper, to taste
1Tbspextra-virgin olive or avocado oil

Instructions
Chop all your veggies, apple, and sausage into similar sized pieces to ensure even cooking.
Transfer everything into a large bowl and sprinkle with Italian seasoning. Season with a pinch of sea salt and pepper if desired.
Drizzle with your oil and stir well to combine.
Preheat your air fryer to 390 degrees f.
Add the seasoned ingredients and sausage to your air fryer basket in an even layer then cook for 10-12 minutes, shaking the basket halfway through the cooking time.
Serve hot over cooked brown rice, quinoa, or cauliflower rice if desired.
