Air Fryer Apple Sausage and Veggies

Just 15-20 minutes from now a super delicious, fresh, and colorful meal is ready for you to eat!

Dinner does not get much easier! Save this recipe for those crazy busy nights! You can throw this one together FASTER than any delivery would arrive!

This sweet + savory combo is simply incredible!

If you’re trying to incorporate more vegetables into your diet, this is a truly delicious way to make it happen.

Use any combination of veggies you have on hand; it’ll turn out great!

➡️ So is Sausage actually healthy?!

Can sausages be included as part of a healthy lifestyle? Absolutely! Especially if you know what to look for:

A very easy rule to follow is to choose sausage with the fewest ingredients. Those are usually the healthiest choices.
I always read the ingredients carefully and choose based on that combined with what’s on SALE.

It’s a good idea to always check the packaging and look at the sodium content.

Ideally, choose the sausage with the lowest amount. And if the sausage contains higher sodium, then we don’t need to add much additional salt to the meal as a whole.

I try to buy chicken or turkey sausages that are mostly the actual chicken or turkey meat, gluten-free, nitrate-free, no added sugar, and no weird stuff in general.

There are actually quite a few good options these days! If you need help, be sure to ask your butcher for a recommendation.

Final thoughts: Obviously, we are not choosing sausage for every meal, rather including it here and there for variety and affordability reasons.

4 servings

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 2 small zucchinis, cut into 1-inch tick half moons
  • 1 large Granny Smith apple, cut into 1-inch cubes
  • 1 lb apple chicken sausage, sliced into 1-inch slices
  • 1 Tbsp Italian seasoning
  • sea salt and black pepper, to taste
  • 1 Tbsp extra-virgin olive or avocado oil

Chop all your veggies, apple, and sausage into similar sized pieces to ensure even cooking.

Transfer everything into a large bowl and sprinkle with Italian seasoning.

Season with a pinch of sea salt and pepper if desired.

Drizzle with your oil and stir well to combine.

Preheat your air fryer to 390 degrees f.

Add the seasoned ingredients and sausage to your air fryer basket in an even layer then cook for 10-12 minutes, shaking the basket halfway through the cooking time.

Serve hot over cooked brown rice, quinoa, or cauliflower rice if desired.
