Let marinate for about 15 min.
Meanwhile, cook rice according to package directions and prepare pico de gallo.
Preheat a skillet over med-hi heat. Once hot, add 1 Tbsp of oil and the chicken.
Cook for about 8-10 min, flipping once halfway through.
